The Possibilities Are Endless
Roasted Cherry Tomatoes
Very adaptable, this recipe can be divided and used as an ingredient in a variety of pasta dishes or sauces, in our luscious Roasted Tomato and Buffalo Mozzarella Bruschetta, or in our savory Rustic Roasted Tomato Tart just to name a few.
- 4 cups cherry tomatoes
- 1/4 cup sun dried tomatoes packed in oil minced
- 4 cloves garlic minced
- 4 tablespoons olive oil
- salt and pepper to taste
- Preheat your oven to 350 degrees Fahrenheit.
- Add the cherry tomatoes, sun dried tomatoes, and garlic to a medium sized parchment lined baking dish. Drizzle with olive oil and season with salt and pepper, then mix everything together with your hands.
- Bake for 30 minutes, then remove them from the oven and place the tomatoes in a strainer over a bowl to drain, separating the liquid from the solids to be used in a variety of applications.
